Frozen Almond Butter Banana "Cheesecake" Bites

Frozen Almond Butter Banana "Cheesecake" Bites are an easy, healthy summer dessert for kids (and adults!)


One of our favorite things to do while stuck inside because of both the virus and the crazy Florida heat is to test yummy desserts! This one came out so awesome we just had to share.



Note! Do keep in mind that if you need a 100% gluten free dessert to purchase gluten free oats. The reason for this is because oats may be processed in a facility that also creates wheat products. Because of this, wheat may contaminate the machinery used to roll the oats and be present in trace amounts.


Simple ingredients


One of the most important things to us here at VegeCooking (aside from recipes being incredibly delicious, of course) is that we use real, whole food ingredients as much as possible. This recipe uses simply:


  1. Oats

  2. Raw, unsweet almond butter

  3. Unsweetened applesauce

  4. Bananas

  5. Dairy-free chocolate chips*

  6. Sea salt


*From-scratch chocolate alternative - mix the following:

1/3 cup melted coconut oil

1/3 cup cocoa butter

¼-⅓ cup maple syrup

1/2 cup cacao powder

1 teaspoon vanilla extract


No-bake recipe


No one wants to use the oven in the dead of summer. We thought, why not make a frozen recipe that is so simple, kids can make it on their own! All you need for this recipe is:


  1. Butter knife

  2. Measuring cups and spoons

  3. Toaster oven with baking sheet

  4. Silicone mini muffin pan

  5. Freezer


Health Benefits


  • Bananas are a great source of prebiotic fiber that feed the GOOD bacteria in your body.

  • Almonds are a source of healthy fat and have lots of antioxidants - you can consider them a superfood!

  • Oatmeal is another high-fiber, prebiotic food. Oats are low in calories and fat and will keep you fuller, longer.

Frozen Almond Butter Banana "Cheesecake" Bites


Serves 18


Ingredients


1/3 cup rolled oats, toasted

1/4 cup applesauce

3/4 cup dairy free chocolate chips

2 bananas, cut into 18 slices

4 1/4 teaspoons raw almond butter

Sea salt to sprinkle (optional)


Directions


  1. Mix the toasted oats and applesauce in a small bowl. Put a little in each of 18 mini muffin cups.

  2. Melt the chocolate on high for 30 seconds, stir, microwave an additional 15 seconds, stir....repeat until melted. Should not take more than a minute!

  3. Spoon a little chocolate over the oat layer - reserving some for the top.

  4. Top with a banana slice and 1/4 teaspoon of almond butter

  5. Top with remaining chocolate

  6. Sprinkle sea salt and freeze until well frozen
