Holiday Brussels Sprouts & Pear Salad
Ingredients
1 stalk, about 4 cups of Brussels sprouts
¼ red onion
1 pear, D’anjou or whatever is in season
⅓ cup raisins or dried cranberries
⅓ cup toasted sunflower seeds
Dressing Recipe
1 1/2 tablespoons Dijon mustard
1 Tablespoon maple syrup
2 Tablespoons red wine vinegar
1 clove garlic, finely minced
2 Tablespoons extra virgin olive oil
Salt and pepper, to taste
Directions
Whisk the dressing ingredients in a small bowl.
Shred brussels sprouts in a large bowl; cut the pear into cubes and add the pear, raisins (or dried cranberries), and sunflower seeds to the bowl. Pour the dressing over evenly, and toss to coat.
