Ready for a healthy, spooky Halloween snack that kids can make in a snap? Try our Mummy Fingers! (One-minute oatmeal cookies). With a few simple ingredients, and no special tools needed, you can say "yes!" when your child asks to make themselves this snack.




Ode to oatmeal


Where do we start with the benefits of oatmeal? It's got fiber, it's got protein (yes! protein!), it feeds the good microbes in our bodies that help with digestion, and gut health. It's simply one of the most delicious, heart healthy, whole foods to add to our diets.



Bananas about bananas


Bananas are another prebiotic food that feeds the good microbes in our bodies. They're sweet, full of fiber, low in calories, have no fat, and lots of potassium.


“Potassium in the diet lowers blood pressure. High blood pressure is the major risk factor for stroke and heart disease,” says Lawrence Appel, MD, MPH, a professor of medicine, epidemiology, and international health at the Johns Hopkins Medical Institutions.


Cinnamon


Cinnamon is a warm spice that is wonderful for balancing blood sugar, but let's face it, we really eat it because it's delish!


Tools you'll need


You don't need any special tools for this recipe! Only a bowl, fork, microwave-safe plate, and microwave.


Though some people are iffy about using microwaves, the cook time is very low, and they're safe for younger children to operate. Additionally, it's all some college kids and military personnel have access to, so we like to offer options for everyone.

Mummy Fingers

Serves 1


Ingredients


1 banana

3/4 cup oats

Dash of salt

Dash of cinnamon

5 non-dairy white chocolate chips


Directions


  1. Mix the bananas, oats, salt, and cinnamon. Roll into five "fingers" and use one white chocolate chip for each fingernail.

  2. Microwave for 1 minute, let cool and enjoy!
